Superpower Bars

On snack duty for the whole class? Before you panic, try this easy snack idea! Superpower fruit and nut bars can be made from any kind of dried fruits and nuts - just use what you have in your pantry. Dates, prunes and raisins are all good but this recipe uses apricots, which are particularly delicious when paired with almonds and coconut.

Ingredients

    cup raw almonds
  • 1
    cup dried apricots
  • ½
    cup unsweetened shredded coconut

Directions

  • 1 Process all the ingredients in a food processor until a sticky dough is formed. Stop before it becomes oily. If it's too dry, add more apricots or a little bit of water.
  • 2 For less mess, pour the dough into a gallon size Ziploc® bag and knead it together a bit. Use a rolling pin on the bag to flatten the dough into a large rectangle, about a quarter inch thick.
  • 3 Open the bag and slice into bars. Don’t make them too big - dried fruits and nuts are quite energy-dense.
  • 4 Keep the bars in Ziploc® snack bags for freshness until serving.

Adding a fun “super power bar” label is a great way to remind your kids just how super they are :)
