Fruited Basmati Rice Pilaf

A little bit of salty and a little bit of sweet makes the perfect combination for this basmati rice. You can cook it, freeze it, and reheat it all in the same Ziploc Endurables® Medium Container. Simple as that.

Ingredients

    cup basmati rice

  • 1

    Tbsp. virgin coconut oil

  • 1

    tsp. minced fresh ginger

  • 2

    cups very hot tap water

  • ¼

    cup dried currants

  • ¼

    cup golden raisins

  • 2

    green onions, sliced

  • ¼

    tsp. ground cinnamon

  • ¼

    tsp. salt

  • ¼

    cup chopped roasted salted shelled pistachios

    Get a pot of water ready to later cook the rice by first selecting a pot that is just a bit larger than the Endurables® Container. Then, fill with water to about 2 inches below the top rim of pot. Bring water to a boil.

    Meanwhile, with zipper open microwave the rice, oil and ginger in Endurables® Container on a microwave-safe dish for 1 min. on HIGH; stir. Continue microwaving 1 to 2 min. or until rice is lightly toasted, stirring after each minute.

    Add the 2 cups water and all remaining ingredients except pistachios to the rice. Squeeze air from Endurables® Container ; close zipper. Use tongs to carefully add the Container to the pot of boiling water, pressing the Endurables® Container into the water with tongs to completely submerge under the boiling water.

    Cook 30 min., adjusting the heat as necessary to keep the water at a gentle boil.

Tip

For best results, try to completely submerge the Endurables® Container in the boiling water. However, if the top empty portion of the Endurables® Container is not submerged, the rice will still cook. Squeezing out the air before closing the Endurables® Container will allow it to more readily remain under water.
