Kid-Friendly Veggie Kebab Rockets

On snack duty for the whole class? Before you panic, try this snack idea! Food on a stick is always a winner, and veggie kebabs score on both presentation and health. Take the vegetables you have in your fridge, cut them up and serve with a dip. To create an extra fun snack, you can easily turn the kebabs into rockets. Served with homemade (or store bought) hummus, these kebab rockets make snack time rock!

Ingredients

    VEGGIE KEBAB INGREDIENTS

    Carrots
  •   
    Celery stalks
  •   
    Cherry tomatoes
  •   
    Cucumber
  •   
    Yellow bell pepper
  •   
    Wooden sticks
  • HOMEMADE HUMMUS

    can cooked chickpeas
  • ½
    clove of garlic
  • 1
    tbsp tahini (optional but tasty and a good source of calcium)
  • 1
    tsp cumin
  • ½
    tsp salt
  • 1
    tsp lemon juice
  • ¼
    cup water (adjust to desired consistency)

Directions

  • 1 To make the veggie rockets, slice yellow bell peppers into triangles for the top and thick carrot slices into flame shaped pieces for the bottom. The celery and cucumber can be cut into pieces of about ¾ inches in length each.
  • 2 Start by mounting the carrot flames on a wooden stick. The texture of the carrot is pretty hard, so it helps if the piece is on the thicker side so it doesn't break. Top with celery, cherry tomato and cucumber pieces before finishing it off with the yellow bell pepper triangle.
  • 3 To make hummus, puree all ingredients in a blender until smooth. Store in Ziploc® containers and serve along the veggie kebabs.
